No 1 son has been away shearing and was due home tonight so I thought I’d make him a nice dessert for after our BBQ tea.
This is what I came up with. It was absolutely scrumptious.
Ingredients
Biscuit Base:
- 200 grams sweet biscuits
- 125 grams butter
Custard
- 5 eggs
- 4 cups milk
- 1 tsp vanilla essence
- 1/2 cup cornflour
- 1/3 cup castor sugar
Topping
- mango
- whipped cream
Method
Base: Crush the biscuits and add the melted butter. Press into greased pie dish.
Custard: Place eggs, milk, vanilla essence and cornflour into a saucepan, whisk until combined. Bring to the boil whisking all the time and simmer for 2 mins.
Allow custard to cool and then pour into pie dish. Place in fridge until set.
Place mango over the top of the custard and top whole pie with whipped cream.
ENJOY!!
PS: I had enough custard for nearly 2 pies so you could cut the mixture in half.
PPS: I used frozen mango and it was a bit watery and I should have drained it first. Fresh mango wouldn’t be a problem.
