This is our own recipe. My sourdough starter was starting to overflow and I wanted to try some biscuits (cookies).
These turned out just lovely and after working on the timing of the cooking, we made a heap of them.
Ingredients:
- 3 cups self raising flour
- 1 cup raw sugar
- 1 cup brown sugar
- 1 cup rolled oats
- 1 teaspoon cinnamon
- 250 grams chocolate chips
- 2 beaten eggs
- 1 cup olive oil
- 2 cups starter
Mix dry ingredients add wet ingredients and chocolate chips. Mix until combined.
Drop teaspoonfuls onto a paper lined baking tray.
Bake in a moderate oven (180 degrees) for 14 minutes. Allow to cool on the baking tray and then place on rack until completely cold.
Try not to eat too many.
PS. You could cut this recipe in half if you didn’t want to make so many biscuits.
PPS. The biscuits will be quite soft until they cool.
