I wanted something different for tea the other night, and I thought that because I had heaps of potatoes that I would give potato cakes a go.
These were delicious, a bit labour intensive, but very worth it.
Ingredients:
- 10 large potatoes, peeled and grated
- 5 rashes of bacon
- cheese
- 2 eggs
- 1/2 cup flour
- 1 teaspoon salt
- 1 tablespoon soy sauce
Wash and drain potato and squeeze out excess moisture, place into a bowl. Chop up bacon and cheese add with rest of ingredients to the grated potato.
Mix together until combined.
Heat a non stick frypan and fry in spoonfuls until brown.
ENJOY!!
PS. If you don’t have a non stick pan use a normal one and fry in olive oil.

The bacon is a great addition to this recipe. Our family enjoys potato pancakes with sour cream to dip it in. Bacon? Perfect! Can hardly wait to try it.
