What goes together better than mince, tomatoes and cheese?? These three ingredients are almost a staple here and we are blessed to have our own beef most of the time.
I was looking for something for tea the other night and enchiladas came to mind. I actually have this “need” to make things from scratch, so I made the flat bread for this meal. Sometimes this “need” is good, sometimes not.
The flat breads weren’t hard to make, but it did take a bit of time and I took my daughters advice and kept them warm so they wouldn’t crack.
I opened a jar of canned mince (ground beef) and a jar of tomatoes. I put some tomatoes on the base of my casserole dish and then saved some for the top.
To assemble I just placed some mince on the flat bread and then rolled it up and placed it upside down in a casserole dish with the tomato on the bottom. I continued this until all the flat breads and mince was all used up.
I then poured over some more tomatoes and then covered the top with grated cheese. I baked this in a moderate oven until all the cheese was brown – about 45 minutes.
Served with a fresh salad and some home made tzatziki this was a most delicious meal.
PS. My canned beef has already been cooked up with onion and seasonings.

Hey there, I don’t really feel I should be doing a tutorial on canning when canning comes from America and you have been doing it for ages. I have only been doing it for 5 years or so, I don’t really feel qualified. But all that aside I can and will do a tutorial and hopefully get it up later this week. It is so easy and just great. I made slow cooker lasagna for Mothers Day lunch and I didn’t get out enough mince (ground beef) from the freezer so I just added a jar of canned mince and you wouldn’t even have known, it was delicious. Thank you for your continual encouragement and for challenging me to do things I don’t always feel I can. Blessings xxxx

Have you tried them with corn tortillas/flat breads?
Hey there, good to hear from you. What is the difference between what I used and corn tortillas/flat breads??? Oh I made tomato bread the other day and it was enjoyed but very different. corn tortillas/flat breads are made with corn meal instead of wheat/flour. The Mexicans and South American folks use them a lot. It is a different flavor, nothing major.
Oh…fry up some of those flour tortillas/flat breads and drizzle honey over them–they are amazing! When they are really thin, they sometimes make bubbles that catch the honey in pools. 🙂 I grew up on those in southern Oklahoma (lots of Indian and Mexicans there so we had lots of Indian and Mexican food) and they were called soapapillas. I take some big tortillas and tear them into smaller pieces and deep fry them in whatever oil is on hand, drain them, and drizzle each individually. It’s a real treat! And sprinkle cinnamon and sugar on them is good too. 🙂
Ooohhh fried flat bread wtih cinnamon and sugar sound delicious and I am definitely going to try this as a sweet treat. We don’t eat a lot of mexican food, but I love nachos but my husband has trouble eating the hard corn chips. I might see if I can find some corn tortillas to give them a go. Now I am going to have dinner, you’ve made me hungry. Blessings
