CHOCOLATE APRICOT CAKE

Now you might not think that chocolate and apricot would go together in a cake but this was just delicious and easy.

  • 3 cups Self Raising Flour
  • 2 cups Raw Sugar
  • 3 tablespoons Cocoa Powder
  • 1 x 375 gram packet chocolate melts
  • pinch Salt
  • bottled apricots
  • 2 cups water
  • 1/2 cup olive oil

Mix dry ingredients, add chocolate melts.

I opened a bottled of home preserved ones so it probably equaled approximately 750 ml.

Add apricots and juice and olive oil. Mix this together and then add enough of the 2 cups of water to make a nice moist mixture.

Spoon into greased and lined tin and bake for about 30 mins in a moderate oven.

This cake was delicious and moist and didn’t need icing, but you could ice it with chocolate icing.

  1. That looks good! I could even sneak this past the kids who sniff out fruits a mile away (if I pureed the apricots first).

    You know, this would be amazing too with raspberries or strawberries!!!

    I’m seeing this first thing Sunday morning while having the first cup of coffee, thinking that cake would make a wonderful breakfast! LOL

    1. You could puree the fruit and yes berries would be great too. I don’t know about having it for breakfast though but you Americans can eat some different things LOL :-). Blessings

  2. LOL yes, we are odd folks. 🙂 I make chocolate treats, like chocolate pancakes and cinnamon rolls with chocolate for the kids and hubby on special occasions for breakfast. I know hubby would drool over a chocolate fruity cake for breakfast!

    1. We are more savoury people in the morning and I like nothing better than eggs and mushrooms for breakfast, I don’t think I could face chocolate that early. I suppose the cake does have fruit in it so it could pass for breakfast – maybe 🙂

      1. Middle child would be all over the eggs. He loves eggs with salsa and cheese, and would eat that every day if I had enough eggs to do it. He’s the “savory” one of the family. 🙂

        1. Eggs with salsa and cheese, might have to give that a go. I like fried eggs with sauteed mushrooms and tomatoes for breakfast, this really starts my day off right. Sometimes our chickens don’t lay enough eggs either and because winter is approaching they are going on a holiday. I ask my daughter to go and talk sweetly to them to encourage them, maybe this will work. Blessings

  3. Yum! I was just reading a study today about how beneficial cocoa powder is. I wonder if it still counts if I mix it with a bunch of sugar? At least with these brownies I’d be getting my fruit too! Thanks for the recipe.

    1. Hmmm I’m not sure Jenni if adding sugar counts, but I think we could still go with it. It is a delicious cake and the fruit is an added bonus. Thanks for stopping by. Blessings
